Raw Chocolate Chia Pudding


I LOVE This recipe. Obviously, I love it because CHOCOLATE! But that's not the only reason. I also love it because PUDDING! Okay seriously there is much more to love about this recipe...

This pudding is made with raw chocolate. That is, chocolate in it's purest form. As I mentioned in my previous chocolate post, the darker the chocolate the more beneficial cacao it contains. Well this is as dark and as beneficial as it gets! This pudding also contains chia seeds which are an excellent source of omega-3 fatty acids AND these babies will curb your cravings throughout the day no questions asked. Finally, you get a natural sweetness and good source of fiber with the dates.

So whip up a batch tonight and in the morning you'll have a naturally sweet, seriously creamy, hunger satisfying, taste bud pleasing breakfast, snack or after dinner treat that you'll want to make again and again.

Raw Chocolate Chia Pudding

Ingredients

  • 1 1/2 cups nut milk

  • 1/3 cup chia seeds

  • 1/4 cup raw cacao

  • 5 dates, pitted

  • 1/2 tsp ground cinnamon (optional)

  • 1/4 tsp sea salt

  • 1/2 tsp vanilla extract (optional)

Instructions

  1. Add all ingredients to blender or food processor. Blend until completely smooth and creamy, scraping down the sides as needed.

  2. Pour mixture into a glass bowl. Let rest covered in the fridge overnight or at least 3-5 hours (or until it's achieved a pudding-like consistency).

  3. Leftovers keep covered in the fridge for 2-3 days, though best when fresh.

  4. Serve chilled with desired toppings, such as fruit, granola or coconut whipped cream.
